Cooking the Burger

Prepare the patties
In a bowl, season the ground beef with salt and pepper. Divide the beef into four equal portions and shape them into patties. Make a slight indentation in the center of each patty to prevent puffing during cooking.

Cook the patties
In the same skillet with the reserved bacon fat, cook the patties over medium-high heat for about 3-4 minutes on one side. Flip the patties and place a slice of cheddar cheese on each patty. Cook for an additional 3-4 minutes until the cheese is melted and the patties reach your desired doneness.

Prepare the onions
Slice the red onion thinly.

Cook the onions
In a separate skillet over medium-low heat, add a tablespoon of oil (or some of the reserved bacon fat). Add the sliced onions and cook slowly, stirring occasionally, until caramelized, about 15-20 minutes.
Preparing the Spicy Mayo

Mix the spicy mayo
In a small bowl, combine mayonnaise and hot sauce. Adjust the hot sauce quantity according to your spice preference.
Assembling the Burger

Assemble the burgers
Toast the burger buns lightly. On the bottom half of each bun, spread a layer of spicy mayo, followed by lettuce, a burger patty with melted cheese, caramelized onions, tomato slices, pickles, and finally the top half of the bun.
