Preparation

    Prepare the Seafood

    In a large bowl, combine the shrimp, squid, mussels, clams, and fish fillets. Season with salt and black pepper. Set aside.

    Chop Vegetables

    Finely chop the onion and garlic. Dice the red bell pepper and chop the tomatoes. Set aside.

Cooking

    Sauté Vegetables

    In a large paella or wide skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft and translucent, about 4-5 minutes.

    Add Bell Pepper and Tomatoes

    Stir in the diced red bell pepper and chopped tomatoes. Cook for another 3-4 minutes until the vegetables are softened.

    Add Rice and Paprika

    Add the basmati rice to the skillet, stirring to coat the rice with the vegetable mixture. Sprinkle in the paprika and mix well.

    Pour in the Stock and Wine

    Pour the fish stock and white wine into the skillet. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes.

    Add Seafood

    After 15 minutes, carefully stir in the prepared seafood mixture. Cover again and cook for an additional 10-12 minutes, or until the rice is tender and the seafood is cooked through.

    Finish with Parsley

    Once cooked, remove from heat and sprinkle with fresh parsley. Let sit for a few minutes before serving.
