Preparation and Cooking

    Clean the Clams

    Place the fresh clams in a bowl of cold water with a generous amount of salt. Let them soak for about 30 minutes to allow them to expel any sand or grit. Rinse under cold running water and set aside.

    Prepare the Garlic

    Peel and finely chop the garlic cloves.

    Chop the Cilantro

    Rinse the cilantro under cold water, shake off excess water, and chop it coarsely.

    Sauté the Garlic

    In a large skillet or pan, heat the olive oil over medium heat. Add the chopped garlic and sauté for about 1-2 minutes until fragrant but not browned.

    Add Wine and Clams

    Pour in the dry white wine and bring to a simmer. Add the cleaned clams to the pan, cover it with a lid, and cook for about 5-7 minutes or until the clams open up.

    Season and Add Cilantro

    Once the clams have opened, remove the lid. Season with salt and freshly cracked black pepper to taste. Add the chopped cilantro and gently stir to combine.

    Transfer the clams and sauce to a serving dish. Serve hot, ideally with some crusty bread to soak up the flavorful sauce.
