Marinate the Wings
In a large bowl, combine the chicken wings, hot pepper sauce, garlic powder, onion powder, salt, and black pepper. Mix well to coat the wings thoroughly. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

Prepare for Frying
Take the marinated wings out of the refrigerator. In a separate bowl, mix together the baking powder and a pinch of salt. Sprinkle this mixture over the wings and toss to ensure they are evenly coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Wings
Carefully add the wings to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 8-10 minutes, or until golden brown and crispy. Use a slotted spoon to remove the wings and drain them on paper towels.

Serve the hot wings with your favorite bleu cheese dip on the side.
