Directions
Prepare the filling
In a large bowl, combine the shredded chicken, crumbled bacon, diced ham, mixed cheese, chopped scallions, salt, and black pepper. Mix until evenly combined.
Assemble the quesadilla
Lay one tortilla flat on a clean surface. Spread a portion of the filling mixture evenly over half of the tortilla. Fold the other half over the filling to create a half-moon shape. Repeat with the remaining tortillas and filling.
Cook the quesadillas
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place one quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Add more olive oil as needed for each quesadilla.
Serve
Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges. Serve with sour cream and pico de gallo on the side.
