Prepare the Chicken
Coat the chicken breasts with olive oil and sprinkle blackening seasoning on both sides. Heat a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side or until fully cooked and blackened. Remove from the skillet and let it rest before slicing.
Cook the Pasta
In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.
Make the Alfredo Sauce
In the same skillet used for the chicken, add the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and let it melt. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.
Combine Ingredients
Add the cooked pasta, sliced chicken, cherry tomatoes, and chopped scallions to the skillet with the Alfredo sauce. Toss everything together and season with salt and pepper to taste.
Serve
Plate the pasta and garnish with Romano cheese and additional scallions if desired. Serve hot.
