Prepare the Oysters
Place the shucked oysters in a bowl and pour the buttermilk over them. Allow them to soak for at least 30 minutes.
Make the Coating
In a separate bowl, combine the cornmeal, flour, cayenne pepper, garlic powder, salt, and black pepper. Mix well.
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Coat the Oysters
Remove the oysters from the buttermilk and dredge them in the cornmeal mixture until thoroughly coated.
Fry the Oysters
Carefully place the coated oysters in the hot oil in batches. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Assemble the Po'boys
Spread mayonnaise on the inside of each hoagie roll. Add shredded lettuce, sliced tomatoes, and then top with the fried oysters. Drizzle with hot sauce to taste.
Serve
Serve the fried oyster po'boys immediately while hot.
