Marinate the Chicken
In a bowl, combine chicken breasts with buttermilk. Cover and refrigerate for at least 1 hour (or overnight for best results).

Prepare the Breading
In a separate bowl, mix together flour, cornstarch, cayenne pepper, salt, and black pepper.

Make the Slaw
In a mixing bowl, combine jicama, shredded cabbage, and shredded carrot. Mix well and set aside.

Prepare the Chipotle Mayo
In a small bowl, mix mayonnaise with chipotle in adobo sauce until well combined. Adjust seasoning to taste.

Fry the Chicken
Heat vegetable oil in a deep pan over medium-high heat. Remove chicken from buttermilk and dredge in the flour mixture. Fry in hot oil until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.

Toast the burger buns if desired. Spread chipotle mayo on the bottom bun, place fried chicken, add a slice of American cheese, top with jicama slaw and pickles, and cover with the top bun.
