Make the Dough
In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. In another bowl, combine flour and salt. Add the yeast mixture and warm milk. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Form into a ball and place in a greased bowl. Cover with a cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

Rolling and Folding
Roll out the dough into a rectangle and spread the cold butter evenly over two-thirds of the dough. Fold the unbuttered third over the middle, then fold the remaining third over, like a book. Roll out again into a rectangle and repeat the folding process two more times.

Shape the Croissants
After the final fold, roll out the dough one last time into a large rectangle. Cut into triangles. Starting from the base of each triangle, roll up towards the tip. Place on a baking sheet lined with parchment paper.

Second Rise
Cover the croissants with a cloth and let them rise for another 30-40 minutes.

Bake the Croissants
Preheat the oven to 400°F (200°C). Bake the croissants for 15-20 minutes or until golden brown.
