Prepare the Chips
If you're making house-made chips, heat oil in a deep frying pan over medium heat. Cut tortillas into triangles and fry them in batches until golden brown. Remove and drain on paper towels. Alternatively, use store-bought tortilla chips.
Layer the Nachos
On a large baking sheet, spread a layer of tortilla chips evenly. Spoon chili over the top, followed by a generous sprinkle of shredded cheese, diced tomatoes, and sliced jalapenos.
Melt the Cheese
Place the baking sheet in a preheated oven at 350°F (175°C) for about 10 minutes, or until the cheese is completely melted and bubbly.
Serve
Remove from the oven and let cool for a minute. Drizzle sour cream over the top and serve immediately, allowing guests to enjoy with additional toppings as desired.
