Make the Mayonnaise
In a bowl, combine mayonnaise, drained capers, dill, lemon juice, salt, and black pepper. Mix well and set aside.

Fry the Fish
Heat oil in a frying pan over medium-high heat. Fry each breaded flounder fillet for about 3-4 minutes on each side or until golden and crispy. Drain on paper towels.
Assemble the Sandwich

Build Your Sandwich
Toast the Texas toast slices. Spread a generous amount of fried caper mayonnaise on each slice. Layer shredded lettuce, crispy flounder, red onion, and homemade pickles. Top with another slice of Texas toast and serve immediately.
