1. Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot, bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes, then remove from heat and let it sit covered for an additional 10 minutes.
2. Make Pickled Red Onions
Thinly slice the red onion. In a bowl, mix rice vinegar, sugar, and salt until dissolved. Add the sliced onions and let them sit for at least 15 minutes to pickle.
3. Prepare Jicama Slaw
Julienne the jicama and toss it with a pinch of salt and lime juice (optional) in a bowl.
4. Slice Toppings
Dice the avocado and mango. Thinly slice the jalapeno and scallions.
5. Assemble the Bowl
