Prepare the Mahi
In a small bowl, mix the curry powder, paprika, garlic powder, black pepper, and salt. Rub this spice mixture all over the mahi mahi fillets.

Cook the Mahi
Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned mahi mahi fillets and cook for about 4-5 minutes on each side until the fish is cooked through and has a blackened appearance. Remove from heat and let rest.

Prepare the Curry Mayonnaise
In a small bowl, mix mayonnaise with a pinch of curry powder and lemon juice. Stir until well combined.

Toast the Brioche Buns
Lightly toast the brioche buns in a toaster or on a skillet until golden brown.

Assemble the Sandwich
Spread the curry mayonnaise on the bottom half of each toasted brioche bun. Layer with arugula, sliced tomato, and the blackened mahi mahi. Top with the other half of the bun.
