Prepare the Chicken
Preheat the oven to 375°F (190°C). In a skillet, heat olive oil over medium heat. Add the boneless chicken breasts and cook until no longer pink in the center, about 7-8 minutes per side. Once cooked, shred the chicken and mix it with the smoky BBQ sauce.

Make the Chips
If using store-bought chips, skip this step. For homemade chips, cut tortillas into triangles and fry them in hot oil until golden brown. Drain on paper towels and sprinkle with salt.

Assemble the Nachos
Layer tortilla chips on a large baking sheet. Top with the shredded BBQ chicken, sliced red onions, and cheddar cheese.

Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Remove from the oven and top with jalapeños and fresh cilantro. Serve immediately.
