Cooking Instructions
- 1
Prepare the Vegetables
Preheat the oven to 200°C (400°F). Peel and cube the butternut squash into 1-inch pieces. Trim the Brussels sprouts and cut them in half.
- 2
Toss and Season
In a large bowl, combine the butternut squash and Brussels sprouts. Drizzle with olive oil, maple syrup, salt, black pepper, and rosemary. Toss until well coated.
- 3
Roast the Vegetables
Spread the mixture evenly on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
- 4
Add Cranberries and Nuts
In the last 5 minutes of roasting, add the fresh cranberries and pecans to the baking sheet and return to the oven.
- 5
Serve and Garnish
Once done, remove from the oven and sprinkle with crumbled feta cheese. Serve warm as a seasonal feature dish.
