Pie Crust Preparation

    Combine Dry Ingredients and Butter

    In a large bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

    Form the Dough

    Add ice water, one tablespoon at a time, mixing until the dough just holds together. Divide into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Apple Pie Assembly

    Prepare the Oven and Pie Pan

    Preheat the oven to 425°F (220°C). Roll out one disk of dough and place it in a pie pan.

    Prepare Apple Filling

    In a bowl, mix apples, sugar, cinnamon, nutmeg, and lemon juice. Pour the filling into the prepared crust.

    Assemble and Bake

    Roll out the second disk of dough and place it over the filling. Cut slits for steam to escape and crimp the edges. Bake for 45-50 minutes.

    In a bowl, mix pumpkin puree, sugar, cinnamon, nutmeg, ginger, eggs, and evaporated milk. Pour the filling into the prepared crust.

    Bake for 15 minutes at 425°F (220°C), then reduce temperature to 350°F (175°C) and bake for an additional 40-50 minutes.
