Make the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in milk and buttermilk until just combined. Turn the dough out onto a floured surface and knead gently 3-4 times. Pat into a 1-inch thick circle and cut out biscuits using a biscuit cutter. Place on a baking sheet and bake for 12-15 minutes until golden.

Make the Gravy
In a skillet over medium heat, cook the sausage until browned and cooked through. Remove sausage and drain fat, leaving about 2 tablespoons in the skillet. Stir in flour and cook for 1 minute. Gradually whisk in milk and bring to a simmer. Cook until thickened, about 5 minutes. Season with salt and pepper.

Assemble
Split the warm biscuits in half and spoon the sausage gravy over the top. Serve immediately.
