Cauliflower Taco Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Cauliflower

Preheat the oven to 425°F (220°C). Cut the cauliflower into small florets and place them in a large bowl.

  2. 2

    Season the Cauliflower

Drizzle the olive oil over the cauliflower florets. Add cumin, paprika, garlic powder, salt, and black pepper. Toss until the florets are evenly coated.

  3. 3

    Roast the Cauliflower

Spread the seasoned cauliflower florets onto a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until golden brown and tender, stirring halfway through.

  4. 4

    Warm the Tortillas

While the cauliflower is roasting, warm the corn tortillas in a skillet over medium heat, about 30 seconds on each side, until pliable.

  5. 5

    Assemble the Tacos

Once the cauliflower is done roasting, remove it from the oven. Fill each warm tortilla with roasted cauliflower, top with fresh salsa, and garnish with cilantro. Serve with lime wedges on the side.
