    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a food processor, pulse the gingersnap cookies until they are finely crushed. In a mixing bowl, combine the crushed cookies and melted butter. Mix until well combined.

    Form the Crust

    Press the cookie mixture into the bottom of a 9-inch springform pan to create an even layer. Bake the crust in the preheated oven for 10 minutes, then remove and let it cool.

    Mix the Cheesecake Filling

    In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, and ginger. Mix until well combined and smooth.

    Combine and Bake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for about 1 hour.

    Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight for best results. Before serving, whip the heavy cream and spread it on top of the cheesecake.
