Deglaze and Cook
Stir in the tomato paste and cook for another minute. Pour in the white wine, scraping the bottom of the pot. Let it reduce by half.

Add Broth and Simmer
Add chicken broth, bay leaves, and thyme. Return the pork shanks to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours until the meat is tender.

Prepare Broth
In a separate saucepan, heat the chicken broth over low heat.

Sauté Aromatics
In a large skillet, melt butter over medium heat. Add onion and garlic, and sauté until translucent, about 5 minutes.

Cook Rice
Add Arborio rice and toast for 1-2 minutes. Pour in the white wine and cook until absorbed, stirring frequently.

Incorporate Broth
Add warm chicken broth, one ladle at a time, stirring constantly until absorbed before adding more. This will take about 20-25 minutes.

Finish Risotto
Once the rice is creamy and al dente, stir in Parmesan cheese, salt, and pepper. Set aside.

In a small saucepan, melt butter over medium heat. Add sliced carrots, salt, and pepper. Cook, stirring occasionally, until tender, about 10-12 minutes.
