Prepare the Broccoli Rabe
Bring a large pot of salted water to a boil. Add the broccoli rabe and blanch for about 2-3 minutes until bright green and tender. Remove and place in an ice bath to stop the cooking. Drain and set aside.

Cook the Sausage
In a large skillet, heat the olive oil over medium heat. Remove the sausage from its casing and crumble it into the skillet. Cook until browned and cooked through, about 5-7 minutes. Add minced garlic and red pepper flakes and sauté for an additional 1-2 minutes.

Cook the Cavatelli
In the same pot of boiling water, cook the cavatelli according to package instructions until al dente. Reserve a cup of pasta water and then drain the pasta.

Combine the Ingredients
Add the drained cavatelli and blanched broccoli rabe to the skillet with the sausage. Toss to combine, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Season with salt and black pepper to taste.

Serve
Plate the cavatelli and top with grated Parmesan cheese. Drizzle with additional olive oil if desired.
