Method

Preparation

  1. 1

    Prepare the coffee

Brew 2 cups of strong coffee and allow it to cool to room temperature. Once cooled, stir in the dark rum or coffee liqueur if desired.

  2. 2

    Make the mascarpone mixture

In a mixing bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Gradually add in the mascarpone cheese and vanilla extract, whisking until the mixture is smooth and well combined.

  3. 3

    Soak the ladyfingers

Quickly dip each ladyfinger into the cooled coffee mixture, ensuring they are soaked but not overly soggy. Arrange a layer of soaked ladyfingers at the bottom of a 9x13 inch dish.

  4. 4

    Layer the mascarpone mixture

Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out evenly with a spatula.

  5. 5

    Repeat layers

Add another layer of soaked ladyfingers on top of the mascarpone layer, followed by the remaining mascarpone mixture. Smooth the top layer gently.

  6. 6

    Chill the tiramisu

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and set.

  7. 7

    Serve

Before serving, dust the top with cocoa powder using a fine mesh sieve for a classic finish. Slice and serve chilled.
