Cooking Pasta

    Boil the Pasta

    In a large pot, bring water to a boil. Add a pinch of salt and the pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Set Aside

    Once cooked, drain the pasta and set aside, reserving about 1/2 cup of the pasta water.

Preparing Vegetables

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

    Add Seasonal Vegetables

    Add the bell pepper, zucchini, carrot, and broccoli to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

    Incorporate Cherry Tomatoes

    Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they begin to soften.

Making the Sauce

    Combine Ingredients

    Pour in the vegetable broth and lemon juice, stirring to combine. Allow the mixture to simmer for 2 minutes.

    Season the Sauce

    Add salt and black pepper to taste. If the sauce is too thick, use the reserved pasta water to thin it out.

Combining Everything

    Mix Pasta with Sauce and Vegetables

    Add the cooked pasta to the skillet, tossing to coat the pasta in the sauce and vegetables. Cook for an additional 2-3 minutes to heat through.

    Add Parmesan Cheese

    Stir in the grated Parmesan cheese until melted and well incorporated.

Serving

    Garnish and Serve
