Fish Preparation

    Selecting the Fish

    Visit a local market or fishmonger in El Nido and select fresh Red Snapper, Mahi Mahi, and Grouper. Ensure the fish has shiny scales and a fresh ocean smell.

    Cleaning the Fish

    Rinse each fish under cold water. Scale and gut the fish if not already done by the vendor.

Marinade Preparation

    Mixing the Marinade

    In a bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Whisk until well blended.

    Marinating the Fish

    Place the cleaned fish in a shallow dish and pour the marinade over them. Ensure the fish are well coated. Cover and refrigerate for at least 30 minutes.

Cooking the Fish

    Preheat your grill to medium-high heat. Once hot, place the marinated fish on the grill. Cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork.
