Preheat your oven to 425°F (220°C). Spread the frozen tater tots evenly on a baking sheet. Drizzle with vegetable oil and sprinkle with salt and black pepper. Toss to coat.

Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through the cooking time.

Making Etouffee Sauce

In a large pan, melt the butter over medium heat. Sprinkle in the flour and stir continuously for about 5 minutes, until the mixture turns a light brown color.
