Pasta Preparation
- 1
Cook the Fettuccine
In a large pot of boiling salted water, add the fettuccine pasta and cook according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta water, and set aside.
Seafood Preparation
- 2
Sauté the Seafood
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside. In the same skillet, add the crawfish tails and sauté for 2-3 minutes until heated through.
Sauce Preparation
- 3
Make the Cream Sauce
In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese, Cajun seasoning, and black pepper. Let it cook for about 3-5 minutes until slightly thickened.
Combine and Serve
- 4
Combine Everything
Add the cooked fettuccine, shrimp, and crawfish back into the skillet with the sauce. Toss everything together, adding reserved pasta water as needed to reach desired consistency. Cook for an additional 2-3 minutes to heat through.
- 5
Garnish and Serve
Remove from heat, and stir in the chopped parsley. Serve immediately, garnished with extra Parmesan cheese if desired.
