Potatoes

Method

Preparation

  1. 1

    Wash and Slice Potatoes

Thoroughly wash the Russet potatoes under cold water to remove any dirt. Using a sharp knife or a mandoline slicer, slice the potatoes into thin, even slices (about 1/8 inch thick).

  2. 2

    Soak Potato Slices

Place the sliced potatoes in a bowl of cold water for at least 30 minutes. This step helps remove excess starch and makes the chips crispier.

Cooking

  1. 3

    Heat the Oil

In a large, deep pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

  2. 4

Dry and Fry the Potato Slices

After soaking, drain the potato slices and spread them on a clean kitchen towel to dry completely. Once dry, carefully add a batch of potato slices to the hot oil. Fry for about 3-4 minutes or until golden brown and crispy.

  3. 5

    Remove and Drain

Using a slotted spoon, remove the fried chips from the oil and place them on a plate lined with paper towels to absorb excess oil.

  4. 6

    Season the Chips

While the chips are still hot, sprinkle them with salt and paprika (if using) to taste. Toss gently to ensure even coating.

Serving

  1. 7

    Serve

Allow the chips to cool slightly before serving. Enjoy them as a side with your favorite sub or on their own as a delicious snack.
