Prepare the Coleslaw

Shred the Vegetables
Finely shred the green cabbage and grate the carrots. Place them in a large mixing bowl.

Mix the Dressing
In a separate bowl, combine 1 cup vegan mayonnaise, 2 tablespoons apple cider vinegar, 1 tablespoon sugar, 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Whisk until smooth.

Combine Ingredients
Pour the dressing over the shredded cabbage and carrots. Toss everything together until the vegetables are evenly coated.

Chill the Coleslaw
Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld.
Assemble the Sandwich

Layer the Ingredients
On a slice of bread or a roll, layer 2 slices of plant-based turkey, followed by 1 slice of provolone cheese.

Spoon a generous amount of the prepared coleslaw on top of the provolone cheese.

In a small bowl, mix 0.5 cup of Russian dressing with 0.25 cup of vegan mayonnaise. Spread this mixture on the top slice of bread or roll.

Place the top slice of bread or roll over the filled sandwich. Press down gently to secure. Optionally, you can toast the sandwich for a warm, crispy finish.
