Method

Preparation

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Proteins

While the pasta cooks, dice the chicken breast and season with salt, black pepper, and Cajun seasoning. Set aside.

Cooking

  1. 3

    Sauté the Vegetables

In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the diced bell pepper, onion, and celery. Sauté for about 5 minutes or until the vegetables are softened.

  2. 4

    Cook the Proteins

Add the seasoned chicken to the skillet and cook for about 5-7 minutes until browned and cooked through. Add the sliced Andouille sausage and cook for an additional 3 minutes.

  3. 5

    Add Seafood

Stir in the garlic, crawfish tails, and shrimp. Cook for another 3-5 minutes until the shrimp are pink and opaque.

  4. 6

    Combine with Pasta

Pour in the chicken broth and bring to a simmer. Add the cooked pasta to the skillet, stirring to combine everything well. Let it simmer for another 3-5 minutes to heat the pasta through and absorb some flavors.

  5. 7

    Final Seasoning

Taste and adjust seasoning with additional Cajun seasoning, salt, and black pepper as needed.

Serving

  1. 8

    Garnish and Serve

Serve the pasta hot, garnished with chopped fresh parsley. Enjoy your Mardi Gras Pasta!
