    In a large pot or Dutch oven, heat the olive oil over medium heat.

    Add the chopped onion, bell pepper, and celery to the pot. Sauté for about 5 minutes until the vegetables are tender.

    Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the shredded chicken and sliced sausage to the pot. Cook for another 5 minutes, stirring occasionally.

    Stir in the long-grain rice, chicken broth, diced tomatoes, frozen peas, salt, black pepper, paprika, cayenne pepper, and bay leaves.
