Method

Marinating Chicken

  1. 1

    Prepare the Marinade

In a large bowl, combine buttermilk, hot sauce, salt, black pepper, garlic powder, and onion powder. Whisk until well combined.

  2. 2

    Marinate the Chicken

Add the boneless chicken thighs to the marinade, ensuring each piece is fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Coating Chicken

  1. 3

    Prepare the Coating

In a separate bowl, mix together all-purpose flour, cornstarch, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper until evenly combined.

  2. 4

    Coat the Chicken

Remove the marinated chicken from the fridge. One piece at a time, remove excess marinade and dredge the chicken in the flour mixture, ensuring an even coating. Shake off any excess flour.

Frying Chicken

  1. 5

    Heat the Oil

In a large, deep pan or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Fry the Chicken

Carefully add the coated chicken pieces to the hot oil, ensuring not to overcrowd the pan. Fry for about 5-7 minutes on each side until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

  3. 7

    Drain the Chicken

Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil.

Assembling the Sandwich

  1. 8

    Prepare the Buns

Toast the burger buns lightly in the same oil or on a skillet until golden brown.

  2. 9

    Assemble the Sandwich

Spread mayonnaise on the bottom half of each bun. Place a piece of fried chicken on top, followed by lettuce, a slice of tomato, pickles, and the top half of the bun.

  3. 10

    Serve

Serve the fried chicken sandwiches warm, with your choice of sides.
