Method
For the Fried Catfish
- 1
Marinate the Catfish
In a large bowl, pour the buttermilk over the catfish fillets, ensuring they are completely submerged. Cover and refrigerate for at least 1 hour.
- 2
Prepare the Breading
In a shallow dish, combine the cornmeal, flour, cayenne pepper, paprika, salt, and black pepper. Mix well to combine.
- 3
- 4
Bread the Catfish
Remove the catfish fillets from the buttermilk and allow excess liquid to drip off. Dredge each fillet in the cornmeal mixture, pressing gently to adhere.
- 5
Fry the Catfish
Carefully place the breaded catfish fillets in the hot oil, frying in batches if necessary. Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.
For the Sandwich Assembly
- 6
Prepare the Bread
Slice the French bread rolls lengthwise, being careful not to cut all the way through, creating a pocket for the fillings.
- 7
Assemble the Po-Boy
Spread a generous amount of remoulade sauce inside each bread roll. Layer in the fried catfish fillets, followed by shredded lettuce, sliced tomatoes, and pickles.
- 8
Serve
Close the sandwich and serve immediately with extra remoulade sauce on the side, if desired.
