Slice the Steak
Thinly slice the ribeye steak against the grain into strips about 1/4 inch thick. Season with salt and black pepper.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and green bell pepper. Sauté for about 5 minutes until they are tender. Add the mushrooms and cook for an additional 3-4 minutes until the mushrooms are browned and softened. Remove the vegetables from the skillet and set aside.

Combine and Melt Cheese
Add the cooked vegetables back to the skillet with the steak. Mix everything together and cook for an additional minute. Place the slices of white American cheese over the mixture and cover the skillet with a lid. Let it cook for 2-3 minutes until the cheese is melted and bubbly.

Assemble the Cheesesteaks
Slice the hoagie rolls open lengthwise. Using a spatula, scoop the steak and cheese mixture into each roll. Add hot or sweet peppers if desired.
