Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Make the Crust Mixture
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the crumbs are evenly coated.

Form the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the bottom of a measuring cup to help pack it down.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.

Prepare the Cream Cheese
In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream to the cream cheese, mixing until fully combined.

Incorporate Vanilla and Eggs
Add the vanilla extract and eggs one at a time, mixing on low speed after each addition just until incorporated. Be careful not to overmix.

Pour the Filling
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the oven at 350°F (175°C) for 55-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool the Cheesecake
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Then remove from the oven and refrigerate for at least 4 hours, or overnight.

Prepare the Berries
Rinse the mixed fresh berries under cold water and pat them dry with a paper towel.

Dust with Powdered Sugar
Sprinkle the powdered sugar over the berries and gently toss to coat.

Once the cheesecake has chilled, remove it from the springform pan and top with the sugared berries just before serving.
