Red Beans and Rice

Sautéed Shrimp & Sausage on Creamy Grits

Method

Red Beans and Rice

    Prepare the Beans

    Soak the red beans overnight in water. Drain and rinse before cooking.

    Cook the Vegetables

    In a large pot, sauté the onion, green bell pepper, and garlic in olive oil until soft.

    Add Sausage and Spices

    Add the sliced sausage to the pot, cooking until browned. Stir in the Cajun seasoning, salt, and black pepper.

    Add Beans and Broth

    Add the soaked beans and chicken broth to the pot. Add the bay leaf and bring to a boil. Reduce heat and simmer for about 1.5 hours, or until beans are tender.

    Cook the Rice

    In a separate pot, cook the white rice according to package instructions.

    Combine and Serve

    Serve the red beans over cooked rice, garnished with chopped green onions.

Seafood Gumbo

    Prepare the Base

    In a large pot, heat oil over medium heat. Make a roux by whisking together flour and oil until it turns a dark brown color.

    Add the onion, green bell pepper, celery, and garlic to the roux. Sauté until vegetables are soft.

Shredded Chicken and Sausage Jambalaya
