Shrimp & Crawfish Etouffee

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add diced onion, green bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

Add Garlic and Tomato Paste
Stir in minced garlic and tomato paste. Cook for an additional 2 minutes until fragrant.

Add Broth and Seasoning
Pour in chicken broth and add cajun seasoning. Bring to a simmer.

Add Seafood
Add shrimp and crawfish tails to the simmering mixture. Cook for 5-8 minutes until the shrimp are cooked through and pink.

Season and Garnish
Season with salt and black pepper to taste. Remove from heat and garnish with chopped green onions.

Cook the Eggs
In a non-stick skillet, melt butter over medium-low heat. Pour in the egg mixture and gently stir occasionally until the eggs are scrambled and cooked to your desired consistency.
