Vegetable Preparation

    Chop the Vegetables

    Wash and chop the zucchini, red bell pepper, yellow bell pepper, red onion, and mushrooms into bite-sized pieces.

    Marinate the Vegetables

    In a large bowl, combine the chopped vegetables with olive oil, salt, black pepper, and dried oregano. Toss well to ensure the vegetables are evenly coated. Let it marinate for about 15 minutes.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Vegetables

    Place the marinated vegetables on the grill. Grill for about 10-15 minutes, turning occasionally until they are tender and have grill marks.

Tzatziki Sauce Preparation

    Prepare the Cucumber

    Grate the cucumber and squeeze out excess moisture using a clean towel or paper towel.

    Mix the Tzatziki Sauce

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic (minced), lemon juice, fresh dill, and salt. Mix until well combined.

Assemble the Gyros

    Warm the Pita

    Lightly warm the pita bread on the grill or in a microwave for about 10-15 seconds.

    Fill the Pita

    Fill each pita with a portion of grilled vegetables and a generous dollop of tzatziki sauce.

    Serve the veggie gyros warm with extra tzatziki sauce on the side if desired.
