Grape Leaves Filling Preparation

    Prepare the Rice Filling

    In a skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 3-4 minutes.

    Mix Ingredients

    Add the long-grain rice, chopped dill, parsley, salt, pepper, and lemon juice to the skillet. Stir well to combine.

    Add Liquid

    Pour in the vegetable broth or water and bring to a boil. Reduce heat to low, cover, and simmer until rice is cooked and liquid is absorbed, about 15 minutes. Remove from heat and let cool.

Rolling Dolmathes

    Prepare Grape Leaves

    If using jarred grape leaves, rinse them under cold water to remove excess brine. Lay out the leaves on a flat surface.

    Stuff and Roll

    Place about 1 tablespoon of the rice filling on the center of each grape leaf. Fold the sides over the filling and roll tightly from the stem end towards the tip.

    Arrange in Pot

    Place the rolled dolmathes seam-side down in a large pot. Repeat until all the filling is used.

    Add Cooking Liquid

    Cover the dolmathes with any remaining grape leaves or a plate to keep them submerged, then pour in enough water to cover them. Bring to a gentle simmer.

    Cook

    Cover the pot and cook on low heat for about 40-50 minutes, until the grape leaves are tender.

Tzatziki Sauce Preparation

    Mix Tzatziki Ingredients

    In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Stir until well combined.

    Chill

    Cover and refrigerate the tzatziki sauce for at least 30 minutes to allow flavors to meld.
