Preparation of Bulgur

    Rinse the Bulgur

    Rinse 1 cup of bulgur wheat under cold water in a fine mesh strainer until the water runs clear.

    Soak the Bulgur

    Place the rinsed bulgur in a bowl and cover it with 1.5 cups of boiling water. Let it sit for about 20 minutes or until the water is absorbed and the bulgur is tender.

Vegetable Preparation

    Chop the Vegetables

    While the bulgur is soaking, finely chop the parsley and mint, dice the tomatoes and cucumber, and slice the green onions.

Dressing Preparation

    In a small bowl, whisk together 1/4 cup of olive oil, 1/4 cup of lemon juice, 1/2 tsp of salt, and 1/4 tsp of black pepper until well combined.

Combine Ingredients
