Rinse the Bulgur
Rinse 1 cup of bulgur wheat under cold water in a fine mesh strainer until the water runs clear.
- 2
Soak the Bulgur
Place the rinsed bulgur in a bowl and cover it with 1.5 cups of boiling water. Let it sit for about 20 minutes or until the water is absorbed and the bulgur is tender.

Chop the Vegetables
While the bulgur is soaking, finely chop the parsley and mint, dice the tomatoes and cucumber, and slice the green onions.
Dressing Preparation
- 4
Mix the Dressing
In a small bowl, whisk together 1/4 cup of olive oil, 1/4 cup of lemon juice, 1/2 tsp of salt, and 1/4 tsp of black pepper until well combined.
Combine Ingredients
- 5
Combine Everything
In a large mixing bowl, combine the soaked bulgur, chopped parsley, chopped mint, diced tomatoes, diced cucumber, and sliced green onions.
- 6
Add Dressing
Pour the dressing over the bulgur and vegetable mixture and toss gently to combine. Adjust seasoning with additional salt and pepper if desired.
Serving
- 7
Chill and Serve
Let the salad sit for at least 30 minutes in the refrigerator to allow the flavors to meld before serving. Serve chilled or at room temperature.
