Marinating the Meat

    Prepare the Marinade

    In a medium bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk until well blended.

    Marinate the Meat

    Cut the selected meat (lamb, pork, chicken, or shrimp) into bite-sized pieces. Place the meat in a resealable plastic bag or a shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

Preparing the Skewers

    Soak the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.

    Assemble the Skewers

    Thread the marinated meat onto the skewers, alternating with chunks of bell peppers, red onion, and zucchini. Leave a little space between each piece to ensure even cooking.

Grilling

    Preheat the Grill

    Preheat the grill to medium-high heat, around 400°F (200°C).

    Grill the Skewers

    Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the meat is cooked through and has nice grill marks. For shrimp, cook until they turn opaque.

Serving

    Garnish and Serve

    Remove the skewers from the grill and let them rest for a few minutes. Sprinkle with chopped fresh parsley and serve with lemon wedges on the side.
