Method

Prepare Tzatziki Sauce

    Grate the Cucumber

    Grate the cucumber and place it in a clean kitchen towel. Squeeze out excess moisture.

    Combine Ingredients

    In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper. Stir well to combine.

    Chill

    Cover the tzatziki sauce with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare Vegetables

    Chop the Vegetables

    Dice the tomatoes, slice the cucumbers, and thinly slice the red onion. Chop the lettuce into bite-sized pieces.

Cook Pita Bread

    Heat Olive Oil

    In a large skillet, heat the olive oil over medium heat.

    Cook Pita

    Place the pita bread in the skillet, cooking for about 1-2 minutes on each side until golden and warm.

Assemble Gyros

    Layer Ingredients

    On each warm pita, layer the lettuce, tomatoes, cucumbers, red onion, feta cheese, and a generous dollop of tzatziki sauce.

    Serve the gyros with a side of Calamata olives for a complete meal.
