Coffee Base

Method

Preparation

  1. 1

    Measure and Combine

In a small coffee pot (briki), measure 200 ml of cold water and add it to the pot.

  2. 2

    Add Coffee Grounds

Add 2 tablespoons of Greek coffee grounds to the water in the briki.

  3. 3

    Sweeten

Add sugar to taste (typically 1-2 teaspoons) into the briki with the coffee and water mixture.

  4. 4

    Boil

Place the briki over low heat and allow the mixture to slowly come to a boil. Do not stir after adding the coffee.

  5. 5

    Watch for Foam

As the coffee heats, a foam will start to form. Keep an eye on it to prevent it from overflowing.

  6. 6

    Remove from Heat

Once the foam rises to the top, remove the briki from the heat just before it boils over.

  7. 7

    Serve

Pour the coffee into small cups, allowing the grounds to settle at the bottom. Do not stir after pouring.
