For the Souvlaki

Method

Preparing the Marinade and Meat

    Make the Marinade

    In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper. Whisk until well combined.

    Marinate the Chicken

    Cut the chicken thighs into bite-sized pieces and add them to the marinade. Ensure the chicken is well coated. Cover the bowl and refrigerate for at least 1 hour, or ideally overnight for better flavor.

Grilling the Souvlaki

    Prepare the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

    Skewer the Chicken

    Thread the marinated chicken pieces onto the soaked skewers, packing them tightly but not too tightly to allow for even cooking.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Chicken

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Serving the Souvlaki

    On a serving platter, warm the pita bread slightly on the grill or in the oven.

    Serve the grilled souvlaki skewers alongside the warm pita bread, tzatziki sauce, sliced cucumbers, tomatoes, and red onion. Enjoy!
