Preparation

    Soak Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

    Prepare Marinade

    In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper until well combined.

    Marinate Meat

    Cut the lamb, pork, or shrimp into bite-sized pieces and place them in a resealable plastic bag or a bowl. Pour the marinade over the meat, ensuring it’s well coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, preferably overnight.

Grilling

    Skewer the Meat

    Thread the marinated meat onto the soaked wooden skewers, alternating with pieces of bell peppers and red onion for added flavor and color.

    Preheat Grill

    Preheat your grill to medium-high heat.

    Grill the Skewers

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat is cooked through and has a nice char.

Serving

    Remove the skewers from the grill and let them rest for a few minutes. Serve the kabobs on a platter alongside cherry tomatoes and tzatziki sauce.
