Sampler Platter Recipe

Spanakopita

    Prepare the filling

    In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent. Add fresh spinach and cook until wilted. Remove from heat and let cool. In a bowl, mix cooled spinach, crumbled feta cheese, beaten egg, salt, and pepper.

    Assemble the Spanakopita

    Lay one sheet of phyllo dough on a clean surface, brush with olive oil, and add another sheet on top. Place a spoonful of the spinach filling along one edge and roll tightly. Repeat until all filling is used.

    Bake

    Preheat the oven to 375°F (190°C). Place the rolled Spanakopita on a baking sheet and brush the tops with olive oil. Bake for 25-30 minutes or until golden brown.

Tiropita

    Prepare the filling

    In a bowl, combine feta cheese, ricotta cheese, beaten egg, salt, and pepper.

    Assemble the Tiropita

    Layer phyllo dough on a clean surface, brushing each layer with olive oil. Place a spoonful of the cheese mixture along one edge and roll tightly. Repeat until all filling is used.

    Bake

    Preheat the oven to 375°F (190°C). Place the Tiropita on a baking sheet and bake for 25-30 minutes or until golden brown.

Dolmades

    Prepare the filling

    Cook rice according to package instructions. In a skillet, sauté chopped onion in olive oil until soft. Mix cooked rice with onion, chopped dill, lemon juice, salt, and pepper.

    Assemble the Dolmades

    Take a grape leaf and place a spoonful of the filling at the stem end. Roll tightly and tuck in the sides. Repeat until all leaves and filling are used.

    Cook

    Place the rolled dolmades in a pot, adding water and a splash of olive oil. Simmer for about 30 minutes until leaves are tender.

Gyros Meat

    Prepare the marinade

    In a bowl, mix olive oil, minced garlic, oregano, salt, and pepper. Marinate the pork shoulder for at least 1 hour or overnight in the refrigerator.

    Cook the Gyros

    Preheat the oven to 350°F (175°C). Roast the marinated pork for about 2 hours or until tender. Let it rest before slicing thinly.

Serving

    Plate the sampler platter

    On a large serving platter, arrange the Spanakopita, Tiropita, Dolmades, falafel, and sliced Gyros meat. Add Greek Kalamata olives, feta cheese, pita bread, pita chips, hummus, and tzatziki sauce on the side. Serve warm.
