Prepare the Cheese
Slice the kasseri cheese into thick pieces, approximately 1 inch in thickness, so they melt evenly when heated.

Prepare the Pita
Warm the pita bread in a dry skillet over medium heat until slightly toasted, about 2-3 minutes per side. Keep warm until serving.

Melt the Cheese
In a small, oven-safe skillet, place the sliced kasseri cheese. Heat over medium heat until the cheese begins to melt and bubble, about 5-7 minutes. Be careful not to let it burn.

Flame with Brandy
Once the cheese is melted and bubbling, carefully pour the Greek brandy over the cheese. Using a long lighter or match, ignite the brandy. Allow the flames to burn for a few seconds to create a dramatic presentation, then extinguish the flames by covering the skillet with a lid.

Plate the Dish
Carefully transfer the skillet to a heat-proof surface. Serve immediately with warm pita bread on the side for dipping. Garnish with freshly chopped parsley.
