In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of pita; if it sizzles, the oil is ready.

Carefully add the pita wedges to the hot oil in small batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until they are golden brown and crispy.

Using a slotted spoon, remove the fried pita wedges from the oil and place them on a plate lined with paper towels to absorb excess oil.
