Preparation of Ingredients

Prepare the Eggplant
Slice the eggplants into 1/2 inch thick rounds. Sprinkle salt on both sides and let them sit for about 30 minutes to release moisture and bitterness. Rinse and pat dry.

Prepare the Potatoes
Peel and slice the potatoes into 1/4 inch thick rounds. Set aside.

Chop the Onion and Garlic
Finely chop the onion and mince the garlic cloves.
Cooking the Meat

Cook the Ground Beef
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent. Add the ground beef and cook until browned. Drain excess fat.

Season the Meat
Add salt, black pepper, cinnamon, oregano, and nutmeg to the cooked meat. Stir well to combine and cook for an additional 5 minutes. Remove from heat.
Layering and Baking

Layer the Ingredients
In a large baking dish, layer half of the eggplant slices at the bottom. Follow with half of the potato slices, then half of the seasoned ground beef. Repeat the layers with the remaining eggplant, potatoes, and ground beef.

Add the Marinara
Pour the marinara sauce evenly over the top layer of the dish.

Top with Cheese
Crumble feta cheese over the marinara sauce and sprinkle grated Parmesan cheese on top.
Baking

Bake the Moussaka
Preheat the oven to 180°C (350°F). Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown.
Serving

Serve the Dish
Let the moussaka sit for about 10 minutes before slicing. Serve warm with additional marinara sauce on the side.
