Method

Preparing the Salad Base

  1. 1

    Chop the Vegetables

Wash and chop the romaine lettuce into bite-sized pieces, halve the cherry tomatoes, slice the cucumber, and finely chop the red onion.

  2. 2

    Combine the Salad Ingredients

In a large bowl, combine the chopped romaine, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives. Toss gently to mix.

Marinating the Meat

  1. 3

    Prepare the Marinade

In a bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper to create the marinade.

  2. 4

    Marinate the Meat

Cut the lamb chops into cubes and mix them with the ground beef in a separate bowl. Pour the marinade over the meat, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes.

Cooking the Meat

  1. 5

    Cook the Meat

Preheat a grill or grill pan over medium-high heat. Thread the marinated lamb and beef onto skewers, alternating the pieces. Grill the skewers for about 10-12 minutes, turning occasionally until cooked to your desired doneness.

Preparing the Dressing

  1. 6

    Mix the Dressing Ingredients

In a small bowl, whisk together Greek yogurt, Dijon mustard, honey, garlic powder, salt, black pepper, and water until smooth and well combined.

Assembling the Salad

  1. 7

    Combine Everything

Once the meat is cooked, allow it to rest for a few minutes. Then, cut the skewers to remove the meat and add it on top of the salad. Drizzle the dressing over the salad and toss gently to combine.

  2. 8

    Serve

Serve the Lamb/Beef Combination Souvlaki Salad immediately, garnished with extra feta cheese and olives if desired.
