Method

Prepare Hummus

    Rinse Chickpeas

    Drain and rinse the canned chickpeas under cold water and set aside.

    Blend Ingredients

    In a food processor, combine the rinsed chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water. Blend until smooth. If the mixture is too thick, add a little more water until desired consistency is reached.

    Taste and Adjust

    Taste the hummus and adjust the seasoning if necessary, adding more salt or lemon juice to taste.

Prepare Vegetables

    Chop Lettuce

    Wash and chop the lettuce into bite-sized pieces.

    Slice Tomato

    Wash the tomato and slice it into thin rounds.

    Slice Onion

    Peel and slice the red onion into thin rings.

Assemble Gyros

    Warm Pita Bread

    If desired, warm the pita bread in a toaster or on a skillet for a minute or two until soft.

    Spread Hummus

    Take a piece of pita bread and spread a generous amount of hummus over one side.

    Layer Vegetables

    Layer the chopped lettuce, sliced tomatoes, and red onion on top of the hummus.

    Fold and Serve

    Fold the pita in half to enclose the filling and serve immediately. Enjoy your gyros!
